In this EPIC timelapse titled “Saving New York”, Jarrod Valliere creates a contrast of different tableaux of the city. Jarrod uses buildings reaching to the sky, the many waterways around the island, green parks, and the people making their way to evoke a sense of human strength. The movement of the camera and the transition of day light are all empowered by a voice over of a speech done by Robert F. Kennedy. It is simple beautiful to see the city that never sleeps shown in such a powerful way.

In 2010 Rachael Mamane formed Brooklyn Bouillon a company that partners with local farms (NY) and uses the entire animal to make stocks and demi-glace (a brown base sauce). According to their website their products contain no salt, no MSG, no hydrogenated oil, no grain and no gluten. The company, which has a kitchen in Sunset park, places a high value on sustainability and really shows how the modern world can be efficient and respectful of nature. They’ve got a whole lot of good stuff too…
Current basic stocks include: Pasture-Raised Chicken Stock, Grass-Fed Beef Stock, Local Fish Fumet, and Organic Vegetable Stock.
